Eva’s Jambalaya 

  3 large onions, chopped
 
3 large green peppers, chopped
  3 celery ribs, chopped
12 garlic cloves, minced
  1-1/2 cups butter
  3 lbs fully cooked smoked sausage, cut into 1/2 –inch slices (use skinless sausage if
  available)      
 
9 cups chicken broth
  6 cups uncooked Uncle Ben’s long grain rice ***
  3 cups chopped fresh tomatoes
  1-1/2 cups chopped green onions
   ½ cup minced fresh parsley
  3 tablespoons Worcestershire sauce
  2 or 3 tablespoons Uncle Leon’s Louisiana Seasoning ******
  3 tablespoons browning sauce (optional)
  1 tablespoon salt
  1 tablespoon pepper
 

In a large skillet, sauté the onions, green peppers, celery and garlic in butter until crisp-tender. Place in a very large bowl; stir in the remaining ingredients.

Transfer the ingredients to a 12 qt slow cooker. Once it starts cooking turn cooker to low. Let cook until the rice is cooked and liquid absorbed. Stir often. This recipe will serve 25 to 30 people.

*** Uncle Ben's Rice does not stick together

Note: If you use a seasoning other than Uncle Leon's such as Tony's, you might want to cut back on the salt. Uncle Leon's is low salt.
